People came up with the omnipotence idea later. Early stories didn’t have him omnipotent. Classic power creep issue.

If modern fighting vehicles also count as ‘iron chariots’ I’m pretty sure we could take God on in a fight and win with any modern army.
When it comes to killing God, the His Dark Materials series has an interesting take on the matter.
I like one of the takes on it from the SCP wiki, they find an ancient world ending god, and it was unstoppable and world ending… to humans armed with sticks and primitive bows. When it breaks out it doesn’t take more than a few artillery shells to kill it. We out grow our old gods.
