I don’t think I’ll ever understand the obsession with macaroni cheese. I’ve never had any that I’d describe as anything higher than tolerable. The only exception to this was a dollop of it, fried, on top of a burger.

I make the most banging mac and cheese and it only takes like 15 mins.

Make a white sauce - butter, flour into a paste, add milk and mix til smooth and slightly thinner than the eventual intended sauce.

Add grated cheddar, dijon mustard and salt and pepper. Boil the macaroni til al dente. Mix that shit up and top with parmesan. It is incredible every damn time. The issue is that most mac and cheese is made of shelf stable food adjacent powders.

        shelf stable food adjacent powders.

Thank you for enriching my vocabulary. I’ll be using that. And also the idea of mustard in the bechamel :)

Sounds very similar to how I make it but English mustard and a slash of Worcestershire sauce. Sometimes fry bacon and use the bacon grease instead of butter too.

Also added fried onions before but not done that in a while.

The cheese and heavy starch doesn’t do it for me. At best I find it okay, at worst it turns my stomach.

Hard disagree. If its real Mac and cheese there’s a thing as too much its really rich. Still really good but thats something you only have as a small side dish at bbqs, or thanks giving where your plate competing for space with 12 other side dishes. Bread crumbs on top drive me wild though.

If its store bought in a plastic tub kind of Mac and cheese then it always taste like frozen dinner quality, or something you would get at a buffet for the old people that still some how only costs 7.99, and is exclusively ran by prisoners on work release. I’m with you on that one. that’s the stuff they deep fry at restaurants, and the only acceptable use for the stuff.

Box Mac though I could demolish two boxes if I was feeling like a piggy. Can’t go wrong with Velveta cheese sauce kind, but powdered cheese will do. I try not to eat it often because it makes me feel like a child, but it lasts in the pantry and its nice to have easy cheap food around. Buy a flat of them and forget about it.

When you just dismiss an entire dish because “I’ve never had a good one”.

Have you ever had homemade? Raw rice noodles with a homemade cheese sauce? With spices and garnish?

I’ve never had a good apple pie. I hate apples, especially baked apples. At least I know I don’t like Apple Pie. But very much unlike you, I’m not going to trash Apple Pie or people who enjoy Apple Pie because I’m not an entitled piece of crap who thinks my choice of food is better than yours. And I’m certainly not going to go into a thread about Apple Pie and tell everyone in that thread who loves Apple Pie that their choice of food sucks.

I have tried a wide variety. Enough to have a functional understanding of the spectrum that is mac and cheese.

I’m not interested in your attempts to lecture me about food. You don’t know me and your sneering presumptions about me are of no value.

Yes, you can “um, actually” me in that I haven’t tried every variation of mac and cheese under the sun, so I cannot have an objective opinion. However I’ve tried enough to know well the common features that must be present for it to be mac and cheese, rather than some other dish.

            …and I didn’t particularly enjoy it.

Which is allowed. My gods, where’s the fucking block button?

100% agreed. The reason the box stuff is good is because the cheese is powdered. I think I’ve had good, homemade stuff once ever.

A lot of people don’t properly spice it or choose a good cheese blend for it. Mix some complimentary cheeses, I like gruyere, gouda, and cheddar sharp enough to puncture the hull of an empire-class Fire Nation battle ship, leaving thousands to drown at sea, then include some mustard powder, spicy and smoked paprika, fresh ground pepper, and whatever other pungent spices your soul yearns for. Top it with panko fried in butter and too much garlic.

Or you just don’t like the stuff. But yeah a lot of people make it basically flavorless

I’ve made the “original” recipe from Thomas Jefferson’s chef, and it was better than most I’ve had simply because it’s a proper bechamel sauce base. Most people just throw cheese on buttered noodles with no spices or hopes or dreams or love in their hearts.

I think that’s the point. It’s comfort food; if it’s from a box, you can’t screw it up without really trying to.

So if you see it on offer, you know it’s going to be decent minimum.

I could not agree more. This has got to be the most overrated and underwhelming dish ever. The first time I saw it in a restaurant menu, I looked at my wife like we were in the fucking twilight zone.

“Mac 'n Cheese” 🤮 That shit tastes like over-milked plastic, at best.

The tinned ones I would agree but if you make it yourself its great. I grew up only ever having home made and then in my 20s got given a tin of it for the first time, it’s terrible.

Americans like the worst food. They also have completely white bread sandwiches with peanut butter and jelly. Literally just sugar and fat.

I haven’t seen Americans eat a normal dish with some chicken, vegetables, potatoes, light sauce. You know, normal food. Not deep fried.
